I discovered Pinterest about 5 years ago when a neighbor had a really cool painting. I asked her where she got it and she told me she did it. She found her inspiration on Pinterest.

Yes, Pinterest...little did I know what was about to happen and that's how my not so secret addiction started.

I could literally spend HOURS on there just looking and pinning. My husband actually suggested I might be in need of a "support group". HAHAHA

It wasn't long until he started to reap the rewards of my hours of pinning.
Pinterest is kind of like Google for women. (and these days some men are joining in)
Anytime I have a recipe I want to find or a project to be started, Pinterest is the first place I look.

Recipe inspiration is one of my favorite uses for Pinterest.

So today I'm sharing with you just a few of my favorite recipes I've found on Pinterest that are family approved. Because who isn't looking for new recipes?

If you are interested in taking a glance at all of my Pinterest boards you can find me here.

This Cheesy Enchilada Rice Skillet recipe (via Damn Delicious) is a quick, easy and yummy side dish (or main dish if you add shredded chicken)

Serve along side a grilled or pan seared chicken breast seasoned with taco seasoning and this makes a perfect dinner. The rice is chocked full of veggies so it's an all in one dish.

Cafe Rio Chicken (via Chef in Training) became a family favorite the first time I fixed it. This is a recipe that can easily be doubled as noted in the directions and part can be frozen for a quick fix on a busy night. The leftovers can be easily made into taquitos or quesadillas.

I serve this with rice that has been cooked with chicken bouillon powder added in, use 4 tablespoons for 2 cups of rice. It really gives the rice a delicious flavor.
Warm a can of black beans and make corn salsa (via How Sweet It Is) to use as well.

Layer the rice, beans, chicken, & salsa in an individual serving bowl.
Top with shredded cheese, sour cream and our favorite guacamole I talked about here.
You won't care if you ever walk through the doors of Chipotle again once you make this.

Do you have a favorite Pinterest recipe I should try?
I'm always looking for something new.

What's Up Wednesday

Happy hump day people!!!
This week is screaming by.

I've had this on my calendar every month this year to do and it always sneaks up on me and I miss it.

Well not this time!

The last Wednesday of the month Mel, Shay and Sheaffer host this fun little (make that big) link up where everyone brings you up to speed on what's going on in their little corner of the world.

Here's what you'll find out...

Here's what's up at the Richardson house these days.

What we're eating this week...

This is a collage of what we've had and will likely have this week.
Tilapia, Eggs (w/toast), Fish Tacos and Spinach salad with grilled chicken.

 What I'm reminiscing about...

How this precious baby girl is just about ready to leave the nest. It just can't be true.
Who knew 18 years would go by like 5 minutes.

What I'm loving...

This girl is finally done with school.
No more studying, projects, AP tests and no more least for the next 2 months.

What we've been up to...

Looking for bedding for the dorm.
Talk about exhausting. Katie doesn't really like to shop (which leaves me wondering just how much of my DNA does she really have?) but she has definite ideas about what she wants, doesn't want, likes and doesn't like. This makes for challenging shopping let me just tell you.

She and her roommate decided they'd buy matching bedding so we finally found a couple of options on Zulily.

They decided to go with the bottom one and it's ordered and being shipped to Nashville.
I love all the colors and they will be able to do a lot of fun accessorizing with it AND it will hopefully camouflage dirt and spills.

What I'm dreading...

I doubt I even have to say it. I'm dreading getting on a plane in August and coming back home with out this girl right here.

What I'm working on...

I think it's time to replace our sofas so I'm starting to research and figure out just exactly what I (we) want.

I'm toying with the idea of a sectional in a lighter color so I can easily change up the look of the room.

Maybe something similar to this, but in a sectional...or maybe not?

What I'm excited about...

Growing my Rodan + Fields business!!!

I added my buddy Dawn to my list of PC's this month...YIPPEE!!!

We're turning back the hands of time!!!

I'd love to add you to my list of PC's and help you have the best skin possible. Feel free to visit my website and take the Solution Tool to see just which line best fits your needs. You can email yourself the results and I'll get a copy too in case you have questions or need help deciding where to start.

What I'm watching/reading...

Well I'm not a big reader unless I'm by the pool and this summer I've only gotten to do that once so you can do the math there.

What I'm watching is the Olympic Swimming Trials and we are just way to excited that Townley Haas, a boy who swam on the same two teams with Benny (& Katie in summer swim) just made the US Olympic Team!!!!

He's a real power house and it was SO INCREDIBLY FUN to watch him win 1st in the 200M Free last night.

What I'm listening to...

Still loving Thomas Rhett and wanting to get Blake Shelton's new CD.
Yes, I'm old school and still like to buy CD's as opposed to just downloading music.

What I'm wearing it...

It's been being really hot this week with temperatures reaching the high 90's and even hitting 100, so I'm keeping cool in these little numbers.

I'm also loving my new wedges I just recently got.

What I'm doing this weekend...

Well, that's a good question. We don't have much planned except for some friends are coming into town and we are going to lunch with them on Sunday.

What am I looking forward to next month...

This little guy right here...Jackson!

I was a nanny for Jackson for over a year when we were in MN. I pretty much considered him my practice grand-baby.

Katie and I are going to visit our friends in MN next month and we are going to get to spend several days with Jackson and his family.

This little boy won the hearts of our entire family and had us wrapped around his little finger♥

What else is new...

Not much, this about cover everything I'd have to say.
Besides, I've got to hold some things back for the rest of the week.
We still have Friday Favorites to think about ;)

So what's up with you?
Feel free to shout out in the comments, I'd love to know!

Happy Wednesday friends.
I hope you are having a wonderful week so far.

Try It On Tuesday - Off the shoulder edition

Hey friends!
It's time for another installment of Try It On Tuesday.
I'm going to enjoy trying on summer fashions a bit longer before the stores are flooded with the new fall styles.

And here I am, fresh, ready to go out there and try stuff on.

First stop, Nordstrom

I've been looking for an off the shoulder top and this one is pretty cute. If you aren't feeling like you want to wear one off the shoulder you can also just put it up on your shoulders and wear it like a regular gathered shirt.
It has bell sleeves which are another hot trend this year.
The red one I have on is a small, but the flower one just like it is an x-small which fit better through the straps and shoulders for me.

It comes in a couple of solids and this fun print.

I've also been wanting to try a "cold shoulder" top but have yet to find one I really like.
This one is cute, but it didn't really rock my world. ;) It is really soft though, and would be really comfortable.

Embroidery is just about everywhere you look. This is just the sweetest shirt. Lightweight and gauzy  making it nice and cool for the hot days of summer. This would be perfect for the 4th of July if you have a BBQ or fun gathering to attend and looks precious with red, white or blue jeans.
This blouse is Lucky Brand and I have on an x-small.

This tank has a split back so you definitely have to wear a cami under it, but details like that make such a difference. Details can take a shirt from ho-hum to so cute.

This is another good example of the difference details can make.
The stripes going in different directions and the peplum detail in the back make this adorable.

I'm not sure what is going on on my face in this picture, but maybe it will amuse you.
This is another great option for the 4th of July. It's cute and cool and I imagine those would both be on your list when celebrating.

This top hangs longer in the back and has a cute pleated detail making it a little looser and adding some interest to the back.

I loved the layers on this top. It's like it's fully lined. I have on a cami under it, but I think you could wear it without one.

I stopped in the purse department on my way into the mall and tried this adorable Rebecca Minkoff suede fringe crossbody purse on and the best part is the strap is removable easily making it into a clutch.  It is so cute...I loved it!
(Do you say purse or handbag?)

My next stop was in LOFT and I found several things to try on in there as well.
Big surprise.

I LOVED this embroidered sleeveless tee, but this is a small and it was pretty big so I'm going to order it in an x-small.

This top is another great example of details making a huge difference. It has a darling peplum but that's not all. The yoke on the back is lace.♥
This one is an x-small, but I wanted to try a small so I'm ordering one.

I rarely wear shorts because I don't like my legs...we all have things we don't like and mine is my legs. I tried these on because they are a longer length and they are cute. The top is the same as the grey one, just in white. I think I might need to order it too.

This jumpsuit is precious and it has pockets. This is an x-small and I think I might would like a small better, but amazingly the length was just right. Do I need to say anything else?

Maxi dresses are still showing up and this one has an elastic waist with a little tie and cute straps details in the back.

I made one more stop before I headed home into New York and Company.
It's been quite a while since I've shopped in there, but thought I'd just run through and see what I could find. I stumbled on several cute tops to try on.

I thought this was a really cute off shoulder top and if you look at the bottom picture you could convert it easily by just letting the elastic up on your shoulders.

This top is buttery soft. The fabric feels wonderful and it's super comfortable and again, it can be worn off shoulder or if you're not quite ready for that it can just as easily be worn up on your shoulders.

New York and Company had several off shoulder tops that caught my eye and this was the last one I tried on. I liked it more than I thought I would. I was hesitant about the elastic at the waist, but actually liked it once I saw it on and the lace detail on the bottom of the sleeves is so feminine and pretty. The fabric is light enough to wear during the summer but will also make this top and easy transition as cooler temps start to show up in late summer and early fall.

I think it would look really cute with jean shorts or black jeans or pants dressed up with cute heels for date night or an evening out with the girls.

Aren't those sleeves darling?

This racerback tank is soft and light and just the ticket for steamy, hot summer days...or nights.
Another great choice for the 4th of July, but not limited to a day for red, white and blue.

And last but not least...

Another cute top for the scorching summer temps which can be dressed up or down. This top could really be used for any occasion depending on how you pair it. Jeans, jean shorts, white jeans, black pants or jeans, the possibilities are wide open and this little top is flowy and comfy to boot.

So there you have it friends. I hope you like watching my trip to the mall in pictures. You can see my hair get messier with every thing I try on and let me tell you a couple of hours in the dressing room will wear you out. LOL

The hardest part of trying on all of these cute clothes is not bringing them ALL home with me.
#kentwouldnotbehappy ;)

Hope you have a great day!
It's going to be 100 degrees here today which is above normal, but honestly I don't mind. Give me heat over cold any. day. of. the. week!!!
