What's Up Wednesday

It's the last Wednesday of the month as well as the last day of the month. 
Goodbye August, Hello September and long weekend ahead.

So here we go.

What we're eating this week...

There was a time long ago when I would actually meal plan and shop once a week for groceries. I'm not sure when it was exactly that the wheels fell off that plan, but now my MO is more of what do I feel like eating on any particular day.

We have some kind of salad for sure almost every week and sometimes more than once.

This one had black beans, corn, red bell pepper and chicken tenders in it with a Salsa Ranch Dressing.

We love salmon and I try to make it about once a week. It's so good for you with omega-3 fatty acids and is a good source of vitamin B-12, potassium, vitamin D and protein. Frequently we'll have it with Caesar salad but this night we had it with Butternut Squash Risotto. (which doesn't look all that appetizing, but you're just going to have to trust on this's delicious)

Last night we had Shrimp Scampi and Caesar Salad.

It was delicious!

I talked about the Caesar dressing I've been using here and I'm seriously telling you if you haven't tried it YOU NEED TO!!!

What I'm reminiscing about...

With all the back to school pictures floating around I of course can't help but think about the first day of school every year with these two precious little faces. This was Katie's first day of kindergarten and Benny's first day of 3rd grade. We were very fortunate to live in the same town as my parents for all of the kids elementary and most of their middle school years. 

Every first day of school, Gram and Grandad (my mom and dad) would come over for back to school breakfast and going to the bus stop. We'd always have blueberry muffins, scrambled eggs and of course bacon.

There are a lot of things I miss now with my kids being grown, (like seeing them daily) but there are also a lot of good things that come with this new time. So my advice to all you mommy's of littles is enjoy everyday and don't dread the future. With each new stage comes new rewards and experiences to cherish.

What I'm loving...

FaceTime with Katie!!!

Benny won't indulge us and FaceTime, but Katie will!

Friday she had some downtime and we talked on FaceTime for quite a while. It. was. great!
She and I were able to catch up on all the new things she's doing and what I've been doing to keep myself busy. Definitely the highlight of my week. And we did it again Sunday night so Kent could see her.

What we've been up to...

I doubt I even have to say, but I will. We've been adjusting to being back to just the two of us after over 21 years of having children in the house. It's going very well, thankfully!

What I'm dreading...

See what I'm doing this weekend...I'm dreading it, but will love it when I'm done.

What I'm working on...

Well let's see. I'm usually either blogging or working to grow my Rodan + Fields Business. Today is the last day of the month and Rodan + Fields is having a small price increase beginning September 1. As I've said before, I'm not a big reader unless I'm lying by a pool and I haven't done that but once this summer.

We are so ready for "our shows" to start back up here in the next few weeks. Summer is so slow when it comes to T.V.  We've been watching NCIS on Netflix, but if you have some suggestions, please, please leave them in the comments. TIA!

What I'm listening to...

While I know this isn't the answer you're looking for, it's the truth.
I'm currently listening to the t.v. in the background and a dog barking outside. (someone please put in inside ;)

What I'm wearing...

I took this picture the other day to blog about and just haven't gotten around to it yet.

And this top from Anthropologie has become a favorite. I love the weight of the fabric. You can wash it and dry is slightly then hang to finish drying and no ironing necessary!

This outfit is coming up on the blog later this week.

What I'm doing this weekend...

I've been planning to paint the built-ins that flank our fireplace, so on Saturday we went to buy the Annie Sloan Chalk paint I'm planning to use. I'm going to use Pure White and white wax (it's new). Kent is going to install the same bead board wallpaper in the backs of the bookcases that he put on the ends of the island when I re-did it.  You can read all about that HERE.

What I'm looking forward to next month...

That's super easy!

We are going to go see these two and celebrate mine and Katie's birthdays!!!

What else is new...

I'm excited my CBS (Community Bible Study) starts up again next and week and I'm preparing to take on new role as a Core Group Leader. Last year was my first time to participate in this study and I was so caught off guard when I was approached to join the leadership team in this capacity. I've taught children's Bible classes for what seems like my entire life, but never have I actually lead anything with a group of peers. This is a HUGE step for me if you know me at all. I've been praying and asking God to prepare me to be effective in this new role.

Every month there is a BONUS question for What's Up Wednesday and it wasn't until last month that I caught on to this.

I've already been enjoying my new calf hair lace up flats () and you know my love for my blardiagan and now baby blardigan (7) run deep. I have the split neck tunic (5) in both black and a purple/burgundy and they are really great transition pieces for both fall and spring. I wear them a. lot.

So now you know "what's up" with me.

Let's Talk - Fall Favorites

Today is the last Monday in August and that means it's time for "Let's Talk" with Andrea and Erika.
If you haven't visited their blogs yet you really should. 

How can it be that September is only 2 days away? I don't know about y'all but once September arrives we blink and it's October and then BAM, Thanksgiving is here, we got to bed and it seems like we wake up to Christmas. I guess what I'm saying is hold on because here we go.

Can someone please tell me why we have to start thinking about Christmas before we even get to 4th of July?  I love Hobby Lobby,  but it just drives me ape crazy that before the 4th of July (LITERALLY) they start putting out Christmas decor. It used to get on my nerves that it would creep in to show up before Halloween but COME ON....can't we even make it through the summer before Christmas is showing up? There, I've said my piece so let's move on. Shall we?

One of the (many) things I miss about the East Coast and the South living in California is the changing of the seasons. We have seasons out here...kinda, but they are a whole lot milder and the changes are way more subtle than what we are accustomed to. Don't get me wrong. The weather we have is WONDERFUL. We rarely have to wear a coat and typically can make through most of the year with just a light jacket. But all the beautiful foliage changing colors in the fall, yeah, I miss that.

What makes your heart sing during FALL?

While I really am a summer girl deep down in my soul, I do love getting to change up my wardrobe a little and pull out my sweaters and boots.

I'm especially excited this fall to finally pull on my Frye boots that I've been lusting after for at least the last 5 years. 

Aren't they pretty? They are going to look so great with skinny jeans or leggings. I get giddy thinking about them.

And I'm also anxious to get to wear all my new sweaters I purchased during the Nordstrom sale. This one is soooo soft. You can see all the sweaters I purchased in this post HERE.

I'm sure I've left some things off my list and when I read what others love about fall I'm going to be saying, "me too, me too".

Friday Favorites

We survived our first full week at home with NO KIDS.
It's quiet (and maybe a little boring), but we're adjusting and doing just fine.
I was super busy this week and the days have flown by. Thanks to Snapchat, texting and Voxer, Katie and I have been in touch everyday. #alltheheartemojis 

Just in case you don't know what Voxer is, it's an app that is like a walkie-talkie. We just learned about it a few weeks ago. You can send voice messages in lieu of texts. EASY! Check it out.

Once again it's time to talk about our favorites for the week along with ErikaNarciAndrea.
Favorites can be anything from moments to purchases to activities to foods to people to finds name it. 

Snapchat filters!!! I love these things and I know I lot of my friends do too!!! I think I took this one on our way to the airport 2 weeks ago, but every time I look at it, it cracks me up. Some of the filters on Snapchat are actually really flattering and I only wish I looked as good as they make you look. HA! (this is not one of those) I think this one is really a cross between a Bratz doll and Dolly Parton...LOL


Fresh peaches!!!

Here's the thing. I've never honestly been big on peaches until the last month. I had some while we were in Minnesota and ever since I've been a fan. One of my kids told me they learned in a class that your taste buds change every 7 years. Have you ever heard that before? Well I totally believe it. 

Typically I'm not one to waist my calories on a dessert that doesn't contain chocolate, but I've gotten to where I like peaches and vanilla ice cream. Go figure!


A beautiful view for lunch. After church Sunday Kent and I went home and changed our clothes to run around for the afternoon. We decided we'd go out to an area called Blackhawk and eat lunch and do a little shopping. This restaurant has outdoor seating with the most quaint view and the weather couldn't have been more perfect.

This guy is my favorite lunch date.

I had to show y'all these onion rings. They were HUGE! I think we both agreed they were the biggest ones we'd ever seen and we also agreed they were delicious. They weren't at all stringy like a lot of onion rings, they were almost meaty. I highly recommend them :) (and Kent loved his Reuben sandwich as well)

Katie knows me so well. I didn't even have to ask for a "first day of school" picture.

You moms of boys and girls out there, it is totally different putting them in college in every way.
Dorm room decorating, communication, emotions when leaving, all of it...DIFFERENT!
I'm actually very grateful he went first and she went second. With Benny there was quite a bit less contact but that was okay because Katie was still here. Now that she's gone and is sharing some of what she's experiencing I think I don't feel nearly as lonely as I would if it had been the other way around.

So there ya' go friends. My favorites for the week. Hope if your kiddos started school this week everyone is adjusting and if you are some of the lucky ones who don't start until after Labor Day, make the most of the rest of your summer.

You Gotta' Try This Potato Salad

Potato Salad isn't something I make frequently but I had a bag of baby potatoes I purchased at Costco and didn't want them to go to waste so I put my thinking cap on and came up with this delicious version of potato salad.

Here's where I started.

My original thought was to use one of the two salad dressing in the picture for the salad, but when the potatoes were done roasting I tried one with each of these and they just didn't taste like what I was looking for so I ended up making my own dressing.

I used the following:

1/4 c. mayo
1/4 c. plain Greek yogurt
1 T. Ranch seasoning
and mixed in some yummy Gorgonzola when I added it to the potatoes. 
This Trader Joe's Gorgonzola cheese is by far my favorite Gorgonzola. It's nice and creamy, not dry like so many of the pre-crumbled containers you buy.

Now for the rest of the recipe...

Wash the potatoes and quarter them.

Place on a lined baking sheet and drizzle with olive oil and season with salt and pepper.

Roast in a 400 degree oven for 20-30 minutes until fork tender. When mine were almost done I turned the oven to broil to crisp them up slightly.

While the potatoes were roasting I fried the turkey bacon. You only need about 4 slices. I just go ahead and fry it all and freeze the rest for next time I need it for a recipe.
Cut the 4 strips into small pieces.

This is Columbus brand turkey bacon from Costco and it was so nice and thick. I typically buy Oscar Mayer but they haven't carried it in quite a while so I picked this up and I'm glad I did. I couldn't really get it crisp, but it's nice and meaty. Just what you'd look for in a piece of bacon, right?

I let the potatoes cool on the pan for a few minutes but then got them into the bowl so they'd still be warm and able to soak up that yummy dressing goodness. Did you know potatoes are more receptive to whatever flavor you're adding if they are warm? Yep, true story.

Add the dressing, cut up bacon, sliced scallions and crumbled Gorgonzola and give it all a good, gentle stir to combine but not mash the potatoes. Add a little more Gorgonzola and scallion to the top for garnish.

Serve warm or chilled. This got 2 thumbs up from all 3 of us for a total of 6 thumbs and I think if we'd each had more we would have used them too.

Favorite Kitchen Gadgets

Ahhh, kitchen gadgets!
Are you a fan? Do you have your favorites? Are there some you'd be lost without?

I was working in the kitchen a while back and decided a post on my favorite kitchen gadgets might be a good idea, so today I'm going to talk about 2 of my favorites.

First up, my Microplane zester.

I love my citrus zester! Zest from a lemon, lime or orange can add that extra something to a recipe that will make people wonder "What'd she put in there?".

I think you can add the zest of citrus to anything that calls for the juice to really add a punch to the flavor. And have you tried adding orange zest to French Toast? word. Delicious!!!

You can check out our favorite French Toast recipe HERE. It has orange zest in it and I think it's the key ingredient. It makes a HUGE difference in the flavor.

That right there is a lot of lemony goodness. Here's a only the want the yellow part of the skin, if you get down into the white it's bitter.

Look at all those "naked" lemons. That's another sure to zest before you cut them and juice them. It's much harder to do it in reverse order. 

Another favorite gadget is my juicer. (are you sensing a citrus theme?)

This juicer is great because it not only catches the seeds so you don't have to fish them out of the juice, but it makes juicing super fast and easy. (and gives your hand a little workout at the same time) 

When I first got this tool I used it incorrectly for quite a while. I assumed you placed the lemon in cut side up to fit the form of the juicer. WRONG! You put it in the exact opposite.

TAH-DAH! The correct way, and yes it worked much better.

If you are a gadget collector (I come from the queen of gadgets myself...shout out to mom) and you don't already own these two, then you are definitely going to want to add them to your collection PRONTO!
