A Healthier Haystack

Foods are funny. They can evoke both good and bad memories. These are one of those foods that make me think of my mom...good memory๐Ÿ˜‰.  When I was kid she wasn't a cookie maker. I don't actually recall her ever making cookies with the exception of Christmas cookies. She loved to make desserts and made a mean pan of brownies, magic cookie bars,  pies, cobblers and all kinds of candies but I don't remember her ever making cookies. She would however make "haystacks" every once in while and I think she really likes butterscotch.

Kent loves this Fiber One bran cereal and one day I looked at it and a light bulb popped right up over the top of my head. Ever had that happen to you?


"This stuff looks remarkably like Chow Mein noodles. I bet I could mix them together for a healthier haystack. So I bought some Chow Mein noodles and gave it a try. Tah-dah, it worked! You can't even tell the difference. The shape and texture are the same and once they're all wrapped in that peanut buttery, butterscotch deliciousness no will ever be the wiser." Fiber is important to your health and getting the recommended amount in daily is not easy. This is the perfect way to add fiber into your day, have a somewhat healthy snack disguised as a treat and fool your kids all in one.

Healthier Haystacks

1 11-oz. bag butterscotch chips
1/2 cup peanut butter
2 teaspoons coconut oil
2 C. Chow Mein noodles
1/2 cup salted peanuts, chopped
3 C. Fiber One cereal

Wax paper or parchment paper

Place butterscotch chips, peanut butter and coconut oil in microwave safe container and microwave for 1 minute. Stir and continue microwaving in 30 second intervals until melted.

Combine Chow Mein noodles, Fiber One cereal and chopped peanuts in a bowl. Add melted mixture and combine thoroughly. Using a medium ice cream scoop, scoop out onto wax or parchment paper or Silpat lined baking sheet. Place in refrigerator to harden. Store in airtight container on counter.

  1. Yum! Ari would love these- the kid asked the grocery store clerk to just hand over the jar of peanuts so she could get started munching pronto! I would say chocolate dipped pretzel rods take me back to my childhood- my Nana always made some and decorated them with sprinkles to bring to Houston when she'd visit.
