Roasted Tomato Soup

When fall arrives so do the feelings of wanting all things soup and anything made in a Crock Pot. It's almost like those 3 things are synonymous. I can't believe for years I didn't like tomato soup. What??? Yes, it's true. There were a several things that changed that. A couple of restaurants (Panera and Pinstripes) and this recipe. This just might be the best tomato soup you've ever eaten. Be careful, it also just might ruin canned tomato soup for you.

You will need about 6 cups of cherry tomatoes (or one container from Costco).
Sprinkle with olive oil and salt.

Roast the tomatoes in a 400 degree oven for 35+ minutes until browned and blistered.

Melt 1T olive oil and 2 T butter in a stock pot and add 3 cloves of garlic. I use frozen garlic cloves and if you aren't using these, you're going to want to change that. So easy. Add onion and saute in oil/butter mixture until translucent.

Add crushed tomatoes, tomato sauce, chicken broth and thyme to onion and garlic mixture. 

Add blistered tomatoes and juice from the pan.

Bring to a boil and then reduce to simmer for 30-40 minutes.

Use an immersion blender to completely blend all the ingredients together.

Stir in cream and half and half and allow to warm through.

Top with shredded Parmesan and serve with crackers, corn muffins or grilled cheese.

Roasted Tomato Soup

6 cups (or one container from Costco) of cherry tomatoes
Olive oil
Salt and Pepper
2 T. butter
3 crushed garlic cloves
1 med/lge onion chopped
1 - 15 oz. can crushed tomatoes
1 - 15 oz. can tomato sauce
2 cans chicken broth
1/2 t. thyme
1/2 cup whipping cream
1/2 cup fat free half and half

Heat the oven to 400 degrees. Place tomatoes on a baking sheet and drizzle with olive oil and sprinkle with salt. Toss together to coat and roast until they are shriveled with brown spots. Apx 30-45 minutes.

In a large stock pot heat 1 T olive oil and 2 T butter over medium heat. Add the garlic and onion and saute until the onions are translucent. Add the crushed tomatoes and tomato sauce, chicken broth and thyme. Once tomatoes are through roasting add them with any juice from the pan. Bring to a boil and then reduce heat to let simmer, partially covered for about 40 minutes.

Using an immersion blender (or do batches in a regular blender), blend until the mixture is smooth. Stir in the cream and half and half and allow to warm through. Season with salt and pepper if desired.

Serve with crackers, corn muffins or of course grilled cheese.

Weekend Review and Cyber Monday Sales

All good things must come to an end and the day has come for the kids to go back "home". We had so much fun having them here and adding Erin to the mix was great! We enjoyed our Thanksgiving and lots of together time. Just look at those two guys, like a couple of bookends.❤️

I suspect many of you can relate to this picture. The "after turkey" coma had set in and we were all down for the count.

We got out Friday and did a little Black Friday sale cruising.

 And Saturday we took Erin into San Francisco. The weather couldn't have been any better if we'd ordered it. It's typically windy and cool, but it was just gorgeous Saturday.

Yes, you'd better believe I ate the entire thing and for all you know, I finished Katie's too. Y'all! I can seriously eat some ice cream and this hot fudge is dark chocolate and will rock your world! I mean just look at that grin on my face. Like a kid at Christmas.

I took the selfie stick and the wide angle lens I ordered for Hawaii. Here's a little tip for you. Be careful with your phone and lens on the selfie stick. They are heavy and I swung around and it broke off the selfie stick and my phone went flying. Thankfully it didn't hurt my phone or the lens, but the selfie stick was done for, so I had to throw it away.😒

Happy Thanksgiving and Black Friday Sales

Happy Thanksgiving friends!
When I count my blessing all of you are among them. If it weren't for you I wouldn't have a reason to keep on doing what I do. I have made some of the sweetest friends through this, and the craziest thing is that for people I've never met, I really feel like I know you as if we had. WOW! Mustard and Military

It's a big day around our house. The other baby bird will be flying home tonight. LOL We will all be excited to go to airport and pick Benny up. I've made a small dent in our Thanksgiving prep. Last week I made our favorite Sweet Potato Casserole and stuck it in the freezer. I no longer make a pumpkin pie because...#Costco. Their pumpkin pies are a delicious bargain. I do add a chocolate ganache to the top which ups the ante. Last night I made the brine for the turkey so I can get that soaking today.

Depending on the weather for Black Friday this outfit would be perfect for getting out and hunting down bargains. If it's cooler you can always add a coat and leave the military vest at home. 

After encouragement from several of you (thanks Allie and Kellyann) I finally bought a military vest and I love it. 

I purchased this same sweater last year and it was one of my favorites so I was really happy to see it come back this year. The mustard didn't really strike me at first but I'm loving it now that I've got it and trust me when I tell you that this sweater is so soft. It's currently showing as sold out, but you know how that goes at Nordstrom. It may be in stock later today. Just keep checking. A good alternative might be this one or this one.

I added what's probably the most popular infinity scarf ever. I love mixing patterns. If you are a little fearful of this I really can't encourage you enough. Just step out and DO.IT. You won't be sorry and once you start, you won't be able to stop.

It's always hot in those malls so you can choose to ditch the scarf and vest totally and still look perfectly put together. 

I had to put this picture in with the gorgeous colors of the leaves on this tree.  I love when the trees are turning all the shades of gold and orange.

Gifts For Her

T minus 2 days and counting, til' Thanksgiving that is. I saw yesterday that the outlets by our house are opening at 3:00 on Thanksgiving Day. THREE O' CLOCK PEOPLE! Are you kidding me??? I mean come on. Are we supposed to start having a Thanksgiving brunch so we can be ready to hit the Black Thursday Friday sales? (rant overπŸ˜‰)

I use to love getting up early and hitting those sales first thing on Black Friday. In fact that was one of my favorite days of the year. My mom and I would head out bright and early and if my Aunt was visiting she was right there with us. Well, I'm sorry, but I'm not giving up the afternoon with my family to hit the malls on Thanksgiving Day. If I miss some bargains, then I guess I just miss them. Honestly, at this point I do some shopping on line that going to the mall is almost a hassle. I've gone soft I tell ya'.

Thanksgiving Outfit Ideas

Happy Monday friends! Well, can you believe it? Thanksgiving is just 3 short days away. We got the girls home this weekend and Wednesday night Benny will be here and our little world will be complete. 

In the spirit of sharing I thought like many other bloggers I'd share some ideas in case your lacking inspiration on what to wear for Thanksgiving.

Our gatherings (much like my life) tend to be more on the casual side so my outfit ideas will reflect that. Many of these are styles I've already shared so this is like a recap all in one place. I'm linking to  any of the exact pieces if possible but some of the links will be similar items. This outfit will take from the cool morning to the warmer afternoon and then throw the scarf back on to go home.

I was really unsure about this long cardigan when I ordered it, but I love it and have already worn this outfit twice and just changed out my shoes.

Plaid is the perfect answer when you are looking for a cute shirt to pair with jeans. Throw on a vest for added warmth and you are good to go.

Both of these sweaters are from Free People and you know how I feel about them. They are some of my favorites and they leave plenty of room for an extra piece of pie.πŸ˜‰πŸ°

I don't know what was up with my photos this day, but they are hazy. The ultimate in cozy and comfort are the Gibson fleece tops and lucky for all of us there are quite a few styles to choose from and lots of colors. This twist front style is great because you get the look of a front tuck without having to mess with getting it to look right.

 A long sleeve loose fitting tee is a winner for whether you're eating all the things or heading out to grab some Black Friday Thursday sales and burn off a few calories to make room for more dessert.

Okay y'all, if you are a fan of the Gibson fleece tops (and who's not???) then you are going to want to check this top out. It feels just like the others for a fraction of the price. Katie commented on it as soon as she saw me in the airport Saturday night.  Often when I wear a scarf I still wear a long pendant necklace with it. Not only do I like the look, but if I get hot and take of the scarf, I'm still accessorized. Leggings are the ultimate big eating day pants and give you no limits. I guess that's a good thing? My Frye riding boots are a purchase it took me forever to make, but I haven't once regretted spending the money for them. They are timeless, classics that never go out of style.

And I thought I'd throw in a few flat lays for good measure.

I hope you maybe found something in these that gave you a new idea. Time for me to get a move on. I need to make the brine for my turkey. If you've never tried the Pioneer Woman's turkey brine you are missing it. It makes your bird so juicy and delicious.
